What is Pasta?
Born in China approximately 40 centuries ago, Pasta wandered around the world until it came to Italy. Formerly produced from wheat flour and water, in that sunny country Pasta experienced a new process. In fact, the use of

italian durum wheat, rich of high quality gluten, since then have been allowing Pasta tobe cooked "al dente". Pasta "al dente" is slightly firm, not mushy, when you bite into it. For cooking Pasta "al dente" just drain it one or two minutes before the time indicated on the package directions. Such a tradition, of course, must be preserved. Thus, Italian laws prescribe that Pasta has to be made using pure durum wheat semolina and its quality must be certified.

All of these years of hard restaurant work have taught Tim and Colleen Holmes many lessons. As a result, what is paramount in their restaurant company is taking care of people – their guests and employees alike. The Holmes’s believe in, understand, and work hard to maintain and nurture a true culture of hospitality. After all a restaurant is not only where people come to eat, they gather to spend time with each other.


Timothy D. Holmes, has worked successfully in the food and beverage business for over eighteen years. Throughout his tenure as Vice President, Managing Partner, of Lettuce Entertain You Enterprises in Chicago, he owned, operated and created multiple restaurant concepts;

1995 Brasserie Jo, a 225 seat 1940’s Parisian style brasserie;

1997 Heaven on Seven, a 150-seat full service Cajun/Creole concept;

1998 Brasserie Jo’s second location, Boston, MA;

2001 Petterino’s, a 200-seat Italian Chop House;

1998-2000 Lettuce Catering, a full service off-premise catering company.

As an owner and Director of Operations, Tim was responsible for the creation, decision- making, planning, financial performance and operations of these concepts. Tim’s leadership directed over 20 managers and 500 employees to earn the awards listed below:

Tim holds an Associates Degree in Hotel Restaurant Management from Paul Smith’s College, and sat on the Board of Directors for Lettuce Entertain You Enterprises from 1997-2001.

Colleen O’Bryan Holmes, successful in the food and beverage industry for over nineteen years. After creating Restaurant Consulting Partners, LLC in January 2001, Colleen has worked as a consultant on a variety of projects. Her consulting projects have ranged from a specialty coffee shop in a town of 14,000 to developing a host of operational systems for a 22 million dollar company. Where did she learn how to master all of these skills? As a General Manager for Lettuce Entertain You Enterprises (LEYE) of Chicago.

Colleen believes in the philosophy of a paid education. LEYE is known throughout the entire industry as a leader and innovator in many facets of the business. LEYE’s culture is entrepreneurial. “Learn as much as you can from the people that know more than you do”. For Lettuce Entertain You Enterprises, Colleen managed several of Chicago’s finest restaurants.

Colleen has been responsible for all aspects of operations, having a wide range of experience from fine dining to quick-casual themed restaurants and banquet/catering facilities. Leading and motivating 150 employees and training one on one are among her specialties. Colleen’s passion, creativity and attention to detail make her a leader in the hospitality industry.

Colleen holds a Bachelors of Science degree from Michigan State University, sanitation certificates from the National Restaurant Association, the City of Chicago and the State of Illinois. She is a certified Training for Intervention and Procedures (TIPs) trainer. Currently she sits on the Board of Directors for the New York State Restaurant Association. Also, Colleen is an active member of the Saratoga County Chamber of Commerce and the Saratoga Springs Downtown Business Association.
